Split Pea Soup

Do you have a fear of split pea soup? Do dried peas and legumes make you shiver with the thought of hours of cooking? Fear no more! Pea haters even like this delicious, thick soup.

1 tablespoon vegetable oil
1 onion, chopped
1 bay leaf
3 cloves garlic, minced
2 cups dried split peas
1/2 cup barley
1 1/2 teaspoons salt
7 1/2 cups vegetable broth
3 carrots, chopped
3 stalks celery, chopped
3 Yukon Gold potatoes, diced
1/2 cup chopped parsley
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon ground black pepper

Saute the oil, onion, bay leaf and garlic until onions are translucent (about 5-7 minutes).

Add the peas, barley, salt, water, carrots, celery, potatoes, parsley, basil, thyme and ground black pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 2 hours, stirring occasionally.
