Healthy Spicy Sichuan ‘Peanut’ Noodles

1 cup almond butter (make sure the ingredients contain just almonds, nothing else)
1/4 cup soy sauce
1/4 cup sesame oil
3 tablespoons rice vinegar (not seasoned)
2 tablespoons finely chopped garlic
2 tablespoons grated peeled fresh ginger root
1 teaspoon dried hot red pepper flakes
1-1/2 to 2 tablespoons fresh lime juice
1/2-3/4 cup water
1 package Tofu Shiratakii noodles

-Combine all ingredients into a blender (except tofu noodles). Blend.
-Pour sauce over noodles, garnish with a lime wedge, red pepper flakes, and sesame oil drizzled on top. Enjoy!
