Happy Vegetarian Monday!
This week’s recipe is one Dani and I made last week. Yes, it’s cold soup. But it’s also rather tasty in a very green way, and because it’s raw, you don’t lose any enzymes while cooking, making it a really healthy treat. Treat might be the wrong word. Eat it anyway.
You will need:
- 10 oz fresh or frozen raw peas
- 1 medium avocado
- 1 cup filtered water
- 2 tablespoons lime juice
- a pinch of sea salt
- lime wedges
- olive oil
- Puree the peas, avocado, water, lime juice, and sea salt in a blender.
- Pour into bowls, drizzle with olive oil, sprinkle with pepper and serve with a lime wedge.
