Chilled Avocado Pea Soup

Happy Vegetarian Monday!

This week’s recipe is one Dani and I made last week. Yes, it’s cold soup. But it’s also rather tasty in a very green way, and because it’s raw, you don’t lose any enzymes while cooking, making it a really healthy treat. Treat might be the wrong word. Eat it anyway.

You will need:

  • 10 oz fresh or frozen raw peas
  • 1 medium avocado
  • 1 cup filtered water
  • 2 tablespoons lime juice
  • a pinch of sea salt
  • pepper
  • lime wedges
  • olive oil
  1. Puree the peas, avocado, water, lime juice, and sea salt in a blender.
  2. Pour into bowls, drizzle with olive oil, sprinkle with pepper and serve with a lime wedge.
