“mock” meatloaf

2.14.11 – happy valentine’s day!

this week’s veggie monday featured “mock” meatloaf, found here on peta.org. now, neither of us belong to peta, but they have some good recipes. i’m a bit late posting – it was a hectic week!

the chefs this week were again myself, rod, and danabot (who is still in india). if you have never met danabot, please look here for her debut on dos senoritas. danabot is a shape-shifter, so naturally, she has a different look this week.

riding hippo-back, danabot clutches her stirring spoon, ready to be put to work in the kitchen.

the recipe:

1 medium onion, diced
3 tbsp veggie oil
2 packages beef-flavor gimme lean beef
(or you can use 1 package of this, and 4 boca vegan patties. it gives the meatloaf a nice flamebroiled smokiness)
1/4 cup oatmeal, dry
2 slices of white bread, crumbled
3 tbsp ketchup
2 tsp garlic salt (or onion salt, if you can’t find the garlic)
1 tsp pepper

coating ingredients:

1/4 cup ketchup
1/4 cup packed brown sugar
1/2 tsp dry mustard
1/2 tsp nutmeg

1. saute the onion in the oil over medium heat until soft.

2. take a wine break.


3. combine the onions in the bowl with the ground beef alternative, oatmeal, bread, ketchup, garlic salt, and pepper. thoroughly mix with a spoon or your hands.



4. press the mixture into an oiled loaf pan. cover with foil and bake at 375 degrees for 30 minutes.

5. mix together the coating ingredients and set aside.

danabot was in charge of stirring, obviously. she had the spoon.

6. remove the loaf from the oven and turn it out onto a baking sheet. spread the coating over the entire loaf.

7. cook, uncovered, for another 15 minutes (with tater tots).


to add a little greenery, serve with peas.


it was delicious! rod (a true carnivore) said, and i quote: “i’m not sure i could tell the difference between this and real meatloaf.” success – even the dochee, who has very discriminating taste, was fooled!
sunday night, rod made a flourless chocolate torte and homemade whipped cream. we heated fresh raspberries on the stove to make a sauce, and just like that – a dessert fit for kings!


danabot’s hippo went on a wild rampage later in the evening. ravenous, it happened upon a curious creature, the hippopotamoose, which it promptly ate. here is a photo i managed to capture just before the unfortunate hippopotamoose’s demise.

let it be noted here that danabot in no way approved of this. however, she was unable to control the hippopotamus (having no reins). her smile is actually a shocked grimace.
