mouth-watering nachos


superbowl sunday! everyone is gearing up for an evening of football, beer, and delicious snack foods. or just beer and snack foods. it’s easy to throw out a bowl of store bought salsa and a bag of chips, but if you’ve a little time and energy, make these nachos: you won’t regret it, and your guests will fall in love with you.

side note: this is the first recipe i’m sharing on dos senoritas that i’ve invented. simple as these nachos may be, i’m very proud of them.

the beautiful thing about this recipe is you can go anywhere with it – more or less jalopeno, extra cheese, ground beef, guacamole – whatever you want. there is no way you can ruin these bad boys – i dare you to even try!

round tostito chips
1 bunch spring onions, chopped
2 jalopenos, minced
grated pepper jack cheese
2 cans refried beans
a tub of fresh, prepared salsa (or make your own)
a pie pan or oven-safe dish of some sort
preheated oven – 350
(makes two batches, or three if you’re light with ingredients)

1. layer the tostitos in the dish.

2. smear on refried beans – try to get a little bit on each chip.

3. sprinkle with spring onions.

4. spoon on the fresh salsa and toss on some jalopeno.

5. sprinkle with cheese.

6. do it all over again – layer the chips, refried beans, onions, salsa, and cheese. do this as many times as it takes to fill the dish.

7. pop the dish into the oven and bake for 10-15 minutes, or until the cheese is melted and gooey (check the bottom layer as best you can – it’s horribly sad to be shoveling these into your mouth only to find the bottom layer isn’t fully cooked).

8. enjoy!
